Lemon Asparagus

Steaming is a great healthy way to cook vegetables. There's no need fry your vegetables, adding extra fat when steaming takes next to no time at all, and also allows for the vegetables natural flavour and colour to stay intact. Steamed vegetables do taste great on their own, but it's really easy to add extra flavour to your vegetables without going beyond a few ingredients. It's important to keep close watch on your vegetables as they are steaming as they can overcook very quickly and result in a mushy texture. This side dish is great for the middle of the week.
Note: To trim asparagus simply bend a piece of asparagus with your hands until the stalk naturally snaps. Continue with the rest of the stalks.
Note: I apologize for the quality of my pictures lately. The lighting in my house is horrible for any sort of photography!

Ingredients:
1 pound of asparagus stalks, washed and trimmed
2 tbsp freshly squeezed lemon juice
2 tsp freshly grated lemon zest
2 tbsp olive oil
1 tsp pureed garlic
salt and pepper to taste

Directions:
1. Steam asparagus (with whatever method you prefer, I use a collapsable steamer fitted into a saucepan) for about 2 minutes, just until asparagus feels tender when a fork is inserted.

2. Whisk together lemon juice, lemon zest, olive oil, and garlic and toss with asparagus. Season with salt and freshly ground pepper.
