Cottage Eats

Last week my mom and I were able to take a lovely little escape out of the city and head up north to Jeffery Lake to a beautiful cottage that my aunt and uncle had rented. With our house still up on the market at the time, and offers scattering through, it was nice to have a different atmosphere and be surrounded by close family to take our minds off all of the anxiety and stress we were dealing with. While a lot of people go up to a cottage to escape chores such as cooking, in my family food is once again one of the highlights! No cottage escape is complete without a killer meal! Now what we're going for here is a meal that is killer in flavour, but easy on the effort, which does require some simple planning. This time around all of the three families that were up each brought groceries, with my uncle Eddie taking the reigns in the kitchen. Eddie wanted nothing more than to spend the afternoon blasting his awesome Motown music, while singing and cooking up a feast for us...and possibly sneaking some ribs for himself along the way. Although he spent the day working hard keeping an eye on those delicious slow-cooked ribs that him and my mom collaborated on, the truth is, the meal that we planned was clever and simple enough that you could truly spend all day on the dock, with only a few short last minutes in the kitchen, all it takes is a little planning. When I'm planning cottage meals, I like to think of dishes that allow me and my family to spend as little time as possible in the kitchen. I like to keep things simple, but take things that one step further to make them a little special and memorable. 

THE ENTRÉE
For our entrée, we chose slow cooked ribs. We got two families to each bring up several racks to split the cost, then my mom cooked up her notorious rib sauce recipe back at home so that she could simply pour it into a container to travel up north with us, saving us a lot of time in the kitchen at the cottage. With the ribs needing little babysitting while slow-cooking, you have plenty of time to enjoy cottage life outside! Pulled pork, brisket, ribs, just about any slow cooked recipe will do here.
  • Do the prep - Make your sauce ahead of time, back in the city! 
  • Take it slow - Go for slow roasted meats like ribs, pork shoulder, brisket, etc. Why not bring up your slow cooker from your city kitchen! You won't regret using up that extra space in the car!
  • Start early - Start your cooking first thing in the morning so that you have everything done before the sun comes up, and by dinner time you'll have fall-off-the-bone delicious meat.
THE SIDES
For the sides, we're once again going for simplicity. Little ruby red potatoes and fresh Ontario corn on the cob can be cooked up in no time at all by simply tossing them into some boiling water. Here is where the planning comes in. It's easy to end the dish at that and have your guests and family season up the veggies with some salt and pepper themselves, but why not aim to impress? Whip up some easy and delicious flavoured butters to bring up to the cottage in a cooler. Perfect for topping corn or stirring into hot potatoes, these butters can quickly and easily transform a simple side dish! You can also do all the prep work for an awesome potato salad ahead of time! Just a quick chop of some bell peppers and you're pretty much good to go!
  • Herbaceous Butters - Whip up some softened butter with fresh chopped herbs like basil, parsley, chives, mint, and/or rosemary, scoop and drop it onto a piece of plastic wrap, roll into a log, and refrigerate until solid. Serve with corn on the cob or stir into steaming hot ruby red boiled potatoes.
  • Hot & Spicy Butters - Whip up some softened butter with cayenne pepper, lime, and cilantro for a festive butter with a kick! Scoop and drop it onto a piece of plastic wrap, roll into a log, and refrigerate until solid. Serve with corn on the cob or stir into steaming hot ruby red boiled potatoes.
  • Speedy Potato Salad - Cube up some red, yellow, and/or orange bell peppers ahead of time at home and toss into a tupperware container. When your potatoes are boiled and ready to serve quickly stir in those cubed bell peppers, a scoop or two of mayo, a generous squeeze of lemon juice, salt, pepper, chives and a bit of garlic and ta da! You have a simple, delicious, and healthy potato salad!
THE DRINK
No cottage meal is complete without a fantastic drink! My uncle Eddie once again stepped up to the plate this time around, creating a delicious and striking gin and tonic. By simply cutting up some halved cucumber slices and adding just a touch of fresh cracked pepper, the classic gin and tonic is transformed and becomes irresistible! With only two extra steps, Eddie's take on a classic gin and tonic is sure to be your new favourite!
  • Play with a classic - It's easy to create your signature cocktail by simply adding an ingredient or two to your favourite classic cocktail! Uncle Eddie chose cucumbers and fresh cracked pepper for his gin and tonic, but don't shy away from other ingredients like hot peppers, fresh herbs, berries, brines, syrups, and more!

Happy Thanksgiving

Happy Thanksgiving! This year I feel thankful for so much, way too much to list in fact! But I would like to take the opportunity to thank all my readers for sticking by me, expressing your interest in my work, all your incredible words of encouragement, and sharing my blog with your own friends and family! Without you, I don't know where I'd be! So a great big thank you to you! You all deserve multiple helpings of pecan pie this weekend!

Planning Your Easter Menu

I love celebrating any holiday that involves delicious food, but Easter holds a special place in my heart (and stomach) because it marks the beginning of Spring. Although Easter arrives late this year and Toronto hasn't seen many sunny days in 2011 yet, knowing that Easter is only a few days away reminds me that warm weather is just around the corner as well! When planning an Easter menu I keep those same cheery thoughts of Spring in my mind to find my inspiration. After a long, dark, and cold winter, Springs lively colour palette and fresh flavours couldnt be more warmly received. Bold vivid colours, bright flavours, and a selection of dishes as abundant as the many flowers who's buds we'll soon see sprouting from the trees and ground are what I think of when I think of an Easter menu. Whether you celebrate Easter with a large potluck or an intimate dinner, my Easter menu options are perfect for any Easter celebration! Not only do many of the recipes mimic the colour palette of spring, they are also simple, with many of them giving you the option of making the dish in advance.

I like to think light when coming up with my sides and starters for Easter. After months and months of indulging in comfort food, having a selection of light snacks, veggies, and salads is the only route I want to go come April. I like to have a well rounded selection of sides when entertaining so I try to choose at least one "starch" option to make sure my guests leave feeling satisfied, at least one vegetables side, and at least one salad. Below I have provided a few options from each section. All of these sides may be prepared the day before serving to keep you stress-free come Easter Sunday.
STARCH

In my family we always look forward to eating my Oma's delicious Ginger Ale Glazed ham for Easter, but over the years we have happily introduced other protein options in addition to Oma's infamous ham. Pulled pork is a great option for those who like pork but may not be a fan of ham, this recipe also allows you to make the star of your dish up to a day in advance. For those that can't eat red meat, my Maple Glazed Salmon the perfect sweet and savory option. Don't forget to whip up some hot Cheddar Bacon and Chive Biscuits to serve alongside your entree!

What's Easter without a sweet finale? My squares, cakes, and biscotti are sure to please any sweet tooth, but are especially handy when transporting your desserts to a friend or family members home. If you're having a more intimate gathering my Lemon Ricotta Crepes with Berry Icewine Sauce are a guaranteed show stopper.

I like to freeze fresh herbs and edible flowers inside of ice cubes to add a special touch to punch, soda, and even plain ol' water. It's a super simple little touch that everyone will notice!

Oscar Party Hors D'Oeuvres

The 83rd Annual Academy Awards are being held this Sunday night, an occasion much more worthy of celebration than say...hmmm...Valentines Day? Yup! Definitely! So do your Oscar Party up right by serving your guests a selection of some of my finest hors d'oeuvres. This is a really fantastic spread as there are vegetarian, seafood, and meat options as well as some options without cheese (for crazy people out there who don't like cheese...seriously? I don't trust you!). Each of these hors d'oeuvres are also great showpieces with their array of colours and textures. These are also all really simple and quick to prepare so you can keep your eye on the red carpet and not the stove. Make sure to serve up your favoruite cocktails alongside your hors d'oevres...even if your boss is making you come into work at 8am the next morning...ya I'm talkin' to you! Cheers!

Valentines Day Menu 2011

Every year as the days start to get a littttle longer, I start to get a litttttle bitter knowing that Valentines Day is just around the corner. No it's not because I am usually single on the so-called "holiday", but because I'm one of the firm believers that Valentines Day is merely a Hallmark Card holiday that reenforces dangerous social constructions. Despite my distaste for the day, I do enjoy any occasion that calls for a special meal. Valentines Day is a great excuse pull out some of your favourite dishes to either impress a loved one or indulge yourself in! Here is my Valentines Day Menu that is sure to knock your honey's socks off...and maybe even more!

While you're finishing up the final touches on the meal, you'll want to give your honey a little something to snack on. My Cheaters Handbook Rosemary Focaccia Bread is perfect for this. Store-bought pizza dough makes this savory bread super simple and quick to prepare.
OR
High on flavour, low on time and effort. All this snack takes to prepare is a quick assembly.

Creamy and crunchy, sweet and savory, this salad is packed with complementing textures and flavours to get your lovers taste buds warmed up. Skip the onions to make this more Valentine's Day friendly.
OR
Just like the Fig and Goat Cheese Salad, this salad has those same fantastic complementing textures and flavours. If you're on a budget this salad is the better option, as tomatoes are much more affordable than fresh figs, while still giving you that contrasting sweetness from the balsamic.

Worried about getting salad caught in your teeth? A soup is a great option to start your meal with. The comforting aspect of the soup will help to relax your partner, not to mention warm them up from the February cold.

Striking in both appearance and flavour this is a knockout dish that is sure to get you some major action later! Don't be intimidated by the appearance, this is actually a pretty simple dish to make. If you want to make this entree more filling, rest the chicken and sauce on a bed of egg noodles.

If you're looking for a lighter option to keep you energized for the rest of your night, seafood is the way to go. With its sweet and sticky maple glaze, this salmon has a ton of flavour, will leave you feeling satisfied, and is once again crazy simple and quick to prepare.

This is a good 'ol standby that you can do no wrong with. Not only is it the perfect dish to satisfy any sweet tooth, it is also very sensual in the way the ooey gooey chocolate in the centre of the cake oozes out into a pool of rich chocolate onto your plate.

Think molten chocolate cakes are overdone? These crepes will surely surprise your lover with its beautiful presentation and unique flavours. This is a great option as you can prepare each part of the crepe in advance and because it's so light, you'll still feel pumped for more Valentine's Day fun!

Game Day Dishes 2011


Last year I attended my first Super Bowl party ever, and although I couldn't tell you who won the game, I can list off every delicious item I snacked on from the incredible buffet that everyone contributed to. Nope, I have no idea who's playing this year...despite the fact that I've been blasting Black & Yellow by Wiz Khalifa on my ipod for weeks now...but I do know what artery clogging treats I'll be having this year, and come on, we all know that's what really matters! Next Sunday marks the Super Bowl XLIV, and while I'm not big on the football part of the Super Bowl, I am certainly a fan of the food that accompanies it! The Super Bowl just wouldn't be the same if it weren't for all of the tasty treats that go along with it, so here are some links to recipes to make your Super Bowl Sunday a stand-out occasion!
