Spice Up Your Omelette

Have a bad habit of skipping breakfast?  Oftentimes it can be difficult to think up quick and healthy meals that will carry you through to lunch.  Sure the cereal box is handy, but lets be honest, despite the vast number of different cereals out there in the grocery store, at the end of the day, they're all pretty much the same.  The next time you find yourself reaching for that cereal box, consider making an omelette instead.  

Omelettes are a great source of protein that will give you the energy to take you through your day.  Omlettes are simple and quick to prepare, and trust me simple and quick doesn't mean boring.  To add a kick to my omelette, I like to add some of my favourite jarred salsa or bruschetta topping to the egg.  Prepared salsa and bruschetta toppings are already full of flavour and spice so you can easily kick up your omelette without adding extra prep time.  Trust me, after you have tried a salsa or bruschetta omelette, you will love it so much you will never want to skip breakfast again!  This morning I made a bruschetta omelette with chives and goats cheese, and let me tell you, I savoured every bite!

I never eat omelets, but when i make them for my dad, always put salsa, try mashed potatoes on an omelet, it's good.

I loooooooove omelettes. You can throw everything but the kitchen sink in there and they taste amazing! And mashed pototoes? I'm going to have to try that!

Thanks for all the comments! I've tried cutting potatoes in before but never mashed, sounds like a great idea! That's a breakfast that would certainly carry you to lunch!

Yeah I'm not a big fan of that eggy flavour either, that's why I love salsa and bruschetta because there just complement the flavours of the egg and trick me into loving it.

And noooo way am I putting any peach yogurt to shame! That's the best flavour!! If I'm not too full after an omelette (I usually only put one egg) I'll eat a small yogurt as well to make sure I get my calcium.
