Note: To trim asparagus simply bend a piece of asparagus with your hands until the stalk naturally snaps. Continue with the rest of the stalks.
Note: I apologize for the quality of my pictures lately. The lighting in my house is horrible for any sort of photography!
Ingredients:
1 pound of asparagus stalks, washed and trimmed
2 tbsp freshly squeezed lemon juice
2 tsp freshly grated lemon zest
2 tbsp olive oil
1 tsp pureed garlic
salt and pepper to taste
Directions:
1. Steam asparagus (with whatever method you prefer, I use a collapsable steamer fitted into a saucepan) for about 2 minutes, just until asparagus feels tender when a fork is inserted.
2. Whisk together lemon juice, lemon zest, olive oil, and garlic and toss with asparagus. Season with salt and freshly ground pepper.
